利用壳聚糖开发绿色包装材料的研究

内容简介:壳聚糖(chitosan)是一种可食性高分子材料,它是从虾壳蟹壳等废弃物中提取出的甲壳素脱乙酰基的衍生物,由于它无毒,可生物降解,有抑菌作用并具有成膜性能,是潜在的开发绿色食品包装材料的来源,主要制成可食性薄膜和涂层。可在新鲜的蔬菜、水果上成膜,能起到防止水分蒸发,降解呼吸强度,延长果蔬保险期,控制切分蔬菜褐变的作用。用壳聚糖制成的薄膜透明,在低温下柔软,其抗张强度和高密度聚乙烯(HDPE)和低密度聚乙烯(LDPE)的强度相近,是对环境无污染的新型可降解薄膜,它的应用,可减少白色污染,改善上海的城市生态环境。
本材料在水产品和水果上的应用试验结果表明,用壳聚糖涂膜的样品比未涂膜样品能有效延长保鲜期。

Studies on the film-formed properties and applications of edible chitosan film

Intruduction:
    Chitin is founded in the waste substances from the shellfish , Chitosan is partially N-acetylated 2-deoxy-2-amino-α-glucan derived from chitin, chitosan is nontoxic, edible, antimicrobial and can be used to make a range of films with good properties. Chitosan is the second most abundant polyaccharide on the earth. and commercially available from a stable potential packaging material resource. Chitosan coatings (films) defined as thin layers applied to the surface of fruits and vegetables have been used to reduce weight loss, inhibit respiration rate ,decrease the rate of metabolic progress and extend the shelf life of food. Chitosan films are transparent and its tensile strength is close to witch of the HDPE and LDPE. The use of edible films and coatings is an advantage method of improving quality, stability, cleanliness of numerous foods and also beneficial to the environment.
